Instant Pot Flan

4 servings


1 C Heavy whipping cream or whole milk

2 egg yolks

2 eggs

¼ C Sugar

1 tsp Vanilla extract


In a large measuring cup or bowl, add the whole eggs, egg yolks and vanilla extract. Whisk together until combined. Add the sugar, cream/milk and whisk again.

Strain the custard into a 4 cup IP safe bowl or a decorative silicone mold. Cover with aluminum foil sealing well.

Add 1 Cup water to your Instant Pot’s inner pot. Place your flan on a steam rack or trivet; cover with the lid and make sure steam release handle is set to “Sealing”.

Set pressure cooker to “Steam” and cook time to 10 minutes. Allow NPR (Natural Pressure Release) for 10 minutes.

Remove flan from pot and let sit on counter for 1 hour before putting in refrigerator. Refrigerate at least 6 hours

To serve, run a knife around the flan to loosen from bowl. Place a larger plate on top and invert.

Serve with some fresh berries, caramel or even a fruit puree.
